Whipped Shortbread
My sister Andrea gave
me this recipe. She is the master maker of all things
tasty. If you go to her house it is bound to smell like delicious baking or
cooking of sorts and she will go to no end to make you comfortable. I think
my parents sort of like her better. I might have to make them another
pizza omelette.
This recipe is meant to
go through a cookie press, it makes a little softer dough
than other shortbread recipes. You can find a cookie press at kitchen supply
stores or in the housewares section of most department stores.
2 cups butter (softened)
1 cup icing sugar
1/2 cup corn starch
1 tsp vanilla
3 cups all purpose flour (I used pastry flour)
Cream butter and icing sugar together with electric mixer until fluffy - Add cornstarch and vanilla - Gradually add flour and beat until fluffy (seems everything needs to be fluffy) - Put into cookie press and squeeze out shapes - Bake at 325° until bottoms are light golden
