Pizza Omelette

I have been making this for my parents on Mother's and Father's day since I was
about 11 years old. I still go over to their house to make it on occasion
.

4 eggs
1/8 cup of water
salt and pepper to taste
1 teaspoon oregano
1 garlic clove minced
1 tablespoon olive oil
1 small onion diced
1/2 red or green pepper diced
4 mushrooms sliced
1 tomato diced
sliced ham or bacon cut into slivers
1 cup cheddar cheese grated

In a separate pan heat 1 tablespoon olive oil, add onions and brown, add red or green pepper and sautee, add mushrooms, tomato and ham or bacon and continue to stir until all ingredients are cooked through. Add minced garlic and oregano, salt and pepper to taste. Keep warm.

Beat eggs, water, salt and pepper in bowl until fluffy (water instead of milk keeps eggs from getting rubbery). Pour into a separate non-stick skillet coated with non-stick spray or a little olive oil and cook on low heat until firm. Cover pan with lid to cook the top of omelette.

Pour your vegetable, bacon/ham mixutre over the cooked omelette base. Coat in grated cheddar cheese. Heat until cheese is melted. Slice omelette like a pizza and serve with toast wedges.Guaranteed to up your allowance or at least allow you to become the favourite child.
